Lamb or Mutton

We have Dorper lambs. Lamb is the term used to describe the meat of sheep that are younger than 1 year old. The meat from adult sheep is referred to as mutton. It’s most often eaten unprocessed, but cured (smoked and salted). Mutton has a strong, rich flavor. It has a higher fat content and is tougher than lamb. Lamb is more tender, has a milder flavor and lower fat content.
